Gluten Free and Low Fodmap Potato and Carrot Waffles

During lockdown I have been looking for different savoury lunch ideas, as I have time to make my lunch from scratch (rather than meal prepping on a Sunday!).

I pulled together these potato and carrot waffles, which I topped with poached eggs. They taste great and are really easy to make. I used the Tefal Snack Maker to create them.

Ingredients (makes 4 waffles)

  • 2 medium potatoes
  • 2 medium carrots
  • 1 tbsp Gluten Free plain flour
  • 1/2 tsp of Asafoetida
  • A Pinch of Salt

Method

  1. Peel the potatoes and carrots. Cut the potatoes in half and the carrots into small circles. Place in a pan of boiling water for 20 mins, adding a pinch of salt to the water. Then allow to cool for at least 5 minutes. Once cool, mash the potatoes and carrots.
  2. Add the mashed potato and carrots to a large bowl, and add the gluten free flour, Asafoetida, and a generous amount of salt. Mix in the bowl.
  3. Drizzle or spray some cooking oil into a waffle maker, and distribute the potato and carrot mixture into two waffles. Add a little more oil on top. Close the lid, and cook until the waffles are cooked to your liking (around 5-10 minutes).
