Festive Eating: Low Fodmap Vegetables for your Roast Dinner

I struggle on the fodmap diet to have a large number of nutrients in my diet.  I do try and add more vegetables into my diet, but often stick to the ones i feel ‘safe’ with.

I have been asked by my family which vegetables i would like to have with my Christmas roast so i thought i would do some research to make it easier for my fellow fodmappers.  We need low fodmap vegetables that go well with a lovely home cooked roast!!

So below i have compiled a list of some yummy low fodmap vegetables for Christmas day (or any day in fact):

  • Kale – one cup (chopped)
  • Parsnips
  • Potato
  • Turnips
  • Swede
  • Spinach
  • Brocolli – one cup (of the head)
  • Carrots
  • Bell Peppers
  • Courgette
  • Pumpkin
  • Tomato

I think i will be choosing parsnips (a winter must have for me!!), turnips, carrots and spinach for Christmas Day.

Stay tuned for further festive fodmap blogs later this week.
